Cinnamon Tortilla Chips

Ingredients: 
1 - 8 inch fat free tortillas, 
2 teaspoons white granulated sugar
1 teaspoon cinnamon
3 tablespoons cool whip
Spray Butter


Instructions:
Put Tortilla on cutting board, spritz butter evenly over tortilla and sprinkle mixture of cinnamon and sugar onto both side. Cut into triangles. Put Tortilla pieces onto a baking tray in a 350° Fahrenheit oven for 10-12 minutes. Remove from oven let cool, serve on a plate with 3 tablespoons of Cool whip!




Cucumber Cilantro Salad

Ingredients:
1 large cucumber
3 plum tomatoes
1/2 yellow onion
1/4 cup cilantro
1 lime (juiced)
1 teaspoon red wine vinegar
1 teaspoon olive oil
Salt and Pepper to taste


Instructions:
Dice cucumbers, tomatoes, and yellow onion. Mix into a bowl with minced cilantro. Add the lime juice, vinegar, salt and pepper and stir well. Finally add the olive oil, stir once more and chill for approximately 30 minutes for flavors to marry.
